Experiment Title Extraction and estimation of quercetin from onion waste
Research Type Departmental Research
Experiment Background Quercetin is a flavonoid that is abundant in vegetables such as onions and in fruit, tea, and wine. It exhibits antioxidant and antihypertensive effects. Quercetin can help stabilize cells that release histamine, which can reduce inflammation. It may reduce tumor growth by targeting angiogenesis pathways. It may also protect against breast cancer by suppressing the COX-2 enzyme, which promotes tumor growth. Quercetin can neutralize free radicals, which can damage cell membranes and DNA, have antiviral properties and can also improve athletic performance and reduce post exercise inflammation and oxidative stress. Onion peels are rich in quercetin, a flavonoid compound with antioxidant and anti-inflammatory properties. Quercetin is found in the outer layer of the onion, which is discarded during cooking. Hence, in the present study, we will be trying to extract and characterize the content of quercetin from the waste part of the onion.
